Watching them go from launching a small pickup/drop-off empanada business just a few months ago to already serving the community from their own food truck has been incredible. Their hard work, faith, and dedication are evident in everything they do. The food is absolutely outstanding. Every empanada we’ve tried has been fresh, flavorful, and made with care, but the Chicken & Cheese is my personal favorite and an absolute must-try. They also offer frozen empanadas, which have become a lifesaver for our family on busy weeknights. It’s so convenient to pull them out, heat them up, and still enjoy a restaurant-quality meal at home. Beyond the amazing food, what really stands out is the people behind the business. The Mercado family genuinely cares about serving others, and that comes through in both their customer service and the quality of every order. If you’re anywhere in the McKinney area and haven’t tried them yet, you’re missing out. Supporting local families who are pursuing their dream while delivering an exceptional product is easy when the food is this good. “I bought some beef frozen empanadas - the vacuum seal packaging is great and easy to store. The instructions were easy to follow and they came out of the air fryer hot and crisp! I'll definitely be buying more!”
